Mud season in New Hampshire is also maple sugaring season. The days grow warm and the nights are still cold. This draws the maple sap into the trees to grow into the lush green of summer, and eventually the bright colors of autumn. Sugar houses that dot the landscape come alive with their boilers to reduce fifty gallons of maple sap into a single gallon of wonderful sweet maple syrup. Not only great on pancakes and waffles, maple syrup can be used for glaze on salmon and ribs, poured onto oatmeal and into coffee, and even brewed into beer! Spring is a special time of year in New Hampshire.
