Vacche Rosse, the parmigiana of parmagianas -- the one against which all others are compared. Milk from very specific cows is used to make this delicacy. I like it with a little bit of real balsamic vinegar or all by itself. I will only use it on the best dishes -- home made pappardelle with a mushroom sauce perhaps.
